DRY YEAST Create your best red wines with Red Star Premier Rouge Wine Yeast. This strain is one of the best for fermenting red wines, as it promotes fruity flavors and complex aromas. It works especially well for Cabernet Sauvignon, Merlot, Cab Franc, or Zinfandel.
QUALITY Thanks to its high intensity dark fruit aromas, this yeast strain can enhance lighter red varietals or less robust grapes. It is also well-suited for wines aged in oak barrels. Premier Rouges alcohol tolerance allows you to craft wines up to 15% ABV.
FLEXIBLE FERMENTATION Temperature control is recommended with this strain, and performs best in a fermentation temperature range of 64-86F.
HOME FERMENT INGREDIENTS To begin fermentation, rehydrate yeast in 50 mL of water at a temperature of 95-100F. Gently stir to dissolve, then wait 20 minutes and add to the wine must. This packet of active dry yeast ferments up to 5 gallons of wine.
