Colby Jack is a combination of two cheeses: Colby and Monterey Jack. Both were named after the towns in which they were invented. They are also among only 5 cheeses to be invented right here in the United States. Colby Jack is made by combining Colby and Monterey Jack with one another during the cheese making process. The distinctly mild flavor makes it ideal for grilled Cheese sandwiches. Made by Weyauwega Star Dairy in Weyauwega, WI. Star Dairy has been operated by the Knaus family since 1975.
